S'Mores Cupcakes

Today we attended a end-of-season party for Toot's Girl Scout troop. She and I decided to make S'Mores Cupcakes for the party. These are very easy and quite tasty. Everyone loved them, especially the kids who said they tasted just like real s'mores. Here's how we made them:

Prepare one recipe of Hershey's Celebration Chocolate Cake batter and instead of baking as a cake, bake in cupcake pans with liners. Cool completely.

Then ice the cupcakes with a dollop of marshmallow cream. This is not a scientific dollop. Just use your judgment. Here in coastal Texas where the humidity hovers around 99% day after day, I just put the dollop of marshmallow cream (about a tablespoon full) on the center of the cupcake. Wait a few minutes and the marshmallow cream will magically smooth itself out. I think the high humidity helps it to become more malleable and melty.

Top the marshmallow cream with some crumbled graham crackers. Then add a piece of Hershey bar.

You will have gooey, messy, delicious cupcakes that will cause all the mother's at the party to sigh in angst as the children manage to make sticky messes of themselves. But they will love them!
